Today’s gold standards, rules now written in stone, all started out at one point as an experiment. Passionate, brave people’s most creative ideas were gradually transformed into common practices by several generations. This is why we are so keen to understand and accept this ever-changing world around us. To see and learn what we have to do in Tokaj and in Villány where we belong.

Tokaj

Complicated, rich, mysterious. Also traditional, beautifully-worn, gracefully-aging and distant, as a true legend should be. For two decades we have continually strived to figure out what it has to say, and we tremendously enjoy every minute of that ongoing conversation. Tokaj was never more ready to shine and we are proud to be part of its renaissance.  Let`s raise a glass of Furmint bubbles to it!

Villany

This is not just a wine country to us...it is our heritage. For Christian, it is Somberek, the tiny village nearby where his family lived for centuries. For Peter, it is Bóly, his birthplace. For our Cabernet Sauvignon, it is the cold plateau of Siklós where its lean acidity comes from. For our Cabernet Franc, it is the searing-hot Devil`s Ditch.  Villány is warm, homey and inviting. Once people arrive, no one ever wants to leave its magic.

Padihegy

A land with diverse exposure, our vineyards hugging the mountain from east to west. Rhyolit tuff, geyserite and limnoquarzite mark the terroir with heavy clay content. Due to the delicate quality and unique balance of soil, Padihegy has an instrumental role in our sparkling wine concept with new Chardonnay and Pinot Noir plantations on the horizon.

Winemaking:

Grape hand-harvested, carefully selected, soaked for a few hours on the skin, then gently pressed.

Controlled alcoholic fermentation in both tank and barrel, to emphasize primary characteristics of the variety.

Aged for 10 months in new 225-liter French barrels (15%) and used 225-liter French barrels (85%).

Description:

Nose: Light ruby color with aromas of cranberry, tart cherry, wildflower, and oriental spices, especially cloves. 

Taste: On the palate gentle, silky tannins with nice minerality. An elegant and lean red  with ripe cherry and black tea notes, delicate tartness, well-integrated wood. 

【酒仕🍷試酒】
👃香氣上有著Cranberry 及 Tart cherry 🍒的紅果，亦帶有野花🌼及丁香的芳香。
👅口感柔和，單寧絲滑，帶有明顯的礦物質味。除了Cranberry 及 Tart cherry🍒外，更加多了一層紅茶☕的味道，更顯優雅。

【酒仕🍷酒莊】
💁🏻‍♂️ Sauska是匈牙利新世代酒莊，由Christian Sauska所創立，並跟妻子Andrea一同營運。酒莊葡萄園位於匈牙利東北部的Tokaj及西南部的Villány產區。

💁🏻 酒莊僅利用gravity and ambient yeasts來釀造葡萄酒，Sauska除了Tokaji Aszú，亦有釀造原生葡萄Furmint及Chardonnay；而在Villány種植的紅葡萄品種則有Cabernet Sauvignon、Cabernet Franc及Merlot等波爾多品種。

💁🏻‍♂️ Sauska 的Sparkling Brut NV更是連續兩年於Champagne and Sparkling Wine World Championships得到金獎，可見其質素之高。

【酒仕🍷釀酒】
💁🏻‍♂️ 人手採收🤲🏻，再作嚴格的手工挑選後，浸皮幾小時後再作輕輕壓榨。

💁🏻在不銹鋼缸和法國橡木桶中發酵，之後再在新的 225 公升法國木桶 (15%) 和舊的 225 公升法國木桶 (85%) 中陳釀 10 個月。

【酒仕🍷酒食配】
🦆頭抽法國巴巴拉鴨伴騸牯牛丸 – 優雅的Pinot Noir 跟巴巴拉鴨的香氣相近融和，而特別調製的頭抽更令人再三回味；
