Winemaking:

Estate-owned vines, cared for biodynamically, are located in the heart of Beaune’s premier cru slope. East-facing, the vineyard has sandy, light soils with lots of stones.
Age of Vine: 30-40 years
Hand-harvested. Fermented on indigenous yeasts in open- top fermenters and aged in French oak barrels (350L), with approx. 30% new barrels. Bottled unfined and unfiltered.


Description:
Nose & Taste: Aromas of black cherries, licorice, black plums. Plush and sweet, with fine-grained tannins.
Food Pairing: Grilled lamb sausages; roasted chicken with herbs; air-dried saucisson with black pepper.
