Description

Information:

Domaine du Roc de l’Abbaye is the former property of Saint-Satur Abbey, founded in the 12th century by the Augustinian monks. Our parcels are located on the most beautiful soils on the Pouilly-Fumé appellation.

This cuvée comes from our oldest parcel "Champ Gordé", located on the best hills of Boisgibault, facing the Loire river. A terroir Pouilly-Fumé, intense and with great a finesse!

Winemaking:

Age of the vines :  30 years old

Soil :  Calcaires clay, silex

The grapes are from a careful selection of my Pouilly-Fumé old vines. All of my parcels receive the utmost care and attention prior to harvesting so as to enhance the smoky notes of the appellation and ensure optimum aromatic maturity. We make cold stabulation for 8 days before being fermented at controlled temperatures of l6-18 C in Burgundian barrels from the Bertranges forest.
