Settled in the south of Revermont, in the village of Césancey since 2013, Pauline and Géraud Dromont have been impacted several years in a row by climatic hazards, severely limiting their yields. They then bought organically grown grapes from friends from other regions that they vinified into as many atypical and joyful cuvées in a range called Coup de Jus. Zeus Gonewild is therefore a natural sparkling wine made from Grenache from the south of France. The berries harvested by hand by Pauline and Géraud are vinified in the Jura. The approach is the same as for the estate's grapes, with the use of indigenous yeasts and a refusal of inputs. The wine, still in fermentation, is bottled with residual sugars, which are transformed into alcohol and CO2 in the bottle, bringing nice bubbles to the fresh and tangy whole, rich in redcurrant notes. A real friendly wine, to share around a plate of charcuterie and cheese.
