💁🏻‍♂️ Minière F&R上幾代都是賣葡萄而不釀酒,後來卻慢慢引入釀造機器,開始自釀。一切源自與Anselme Selosse 的合作,作品質素十分高,令現任莊主Frédéric & Rodolphe Minière繼續堅持釀酒到現在。

【酒仕🍷酒食配】
魷魚壽司🦑
Minière F&R Symbiose Extra Brut 2011來自酒莊十分出危的葡萄園及老藤,再加上木桶陳釀7年,產生出十分明顯獨特的香氣味道 - 帶煙燻肉香。魷魚壽司靠著師傅出色刀工,使其爽口易嚼,而酒酸配合著魷魚的膠質,更是令兩者合二為一。

石垣貝壽司
50%Chardonnay 加上50% Pinot Noir,加上只得2.5g/l sugar level,酒感乾身而老葡萄藤有著厚重紮實的礦物質感🪨,跟石垣貝產生共鳴。完美地突顥了貝類的甜味,作出完美襯托。加上刻意用Wasabi 提出香檳由木桶發酵而產生的獨特香氣和質感,更令層次增添不少。

創立源自於三位對葡萄酒充滿熱誠的人,碰巧走在一起。Ace 是香港其中一名資深的品酒師,Chip 和Eric視葡萄酒如珍寶多年;當熱誠與專業擦起來,便產生了不得的火花!

SOMM ACE was founded by three people who with enthusiasm and professionalism on wine. Ace is one of the sommeliers in Hong Kong. Chip and Eric have regarded wine as a treasure for many years.
