Manual harvesting, pneumatic pressing, spontaneous fermentation in vats, aging in 228-litre barrels without topping for 6 years, evaporation of 1/3 of the volume and protection of the wine by a veil of yeast. Aging in a dry cellar, hence the increase in the degree of alcohol. Light filtration before bottling. For all our oxidative wines we use very little sulfur (1 to 2 grs/hl) before fermentation. After oxidative ageing, sulfur is not necessary because it is ineffective (combination of SO² with aldehydes) and therefore no SO² when bottling.
