【酒仕🍷酒造】
💁‍♂️秋田奥羽山脈被白神山和大山環繞⛰️，自然環境中秋田縣的地酒，低溫儲藏的技術十分的優良, 不會刻意追求瓜果香的吟釀風情, 口感餘韻到是十分獨到雅緻。

💁‍♀️位處北秋田郡和鹿角郡之間，故取[北]、[鹿]二字命名，寄望如北方野鹿般跳脱活躍。在昭和十九年受政府指示由八家工場合併而成，於昭和六十一年加盟小山本家。是僅使用秋田的優質大米和豐富的天然地下水製成的酒，在寒冷的季節由森先生用秋田式原酒釀造。

💁酛的意思是「酒母」，在日本酒的釀造中是一個很重要的階段。所謂的「生酛釀造」，意思是運用人工翻攪，用空氣中的天然乳酸菌來發酵，屬於一種古老而且費工夫的釀酒方法。一般來說，「生酛」釀造的日本酒口感厚實、口味偏酸；不過現在有一些酒廠亦可製作出輕快細柔的生酛作品。

【酒仕🍷酒食配】
右口魚壽司: 右口🐟魚柔滑，厚身，配上生酛本釀造將其油脂的香氣發揮出來，右口魚上的蘿蔔蓉則剛好中和了油膩感，而且在清酒的襯托之下，帶出甘甜味。

火炙野生大拖羅壽司: 野生的大拖羅有油脂同時肉身亦十分結實，火炙後🔥，大拖羅的的油脂香再加上口感帶來了叉燒的香氣及肉感；配上北鹿秋田流生酛本釀造，兩者合二為一，混厚無比，令人一再回味。
