Wine making:
Following the manual harvest in late October, the grapes are fully de-stemmed in the cellar, where fermentation with maceration takes place in stainless steel at a controlled temperature over approximately 21 days, using only indigenous Etna yeasts selected by the winery after a long direct experimentation. The wine matures in French oak tonneaux for 12 months and then in stainless steel and then it spends about 10 months in the bottles before it is released.

💁🏻♂️位處意大利西西里島火山Etna 上的酒莊Benanti,成立於1734年,至今已有差不多三百年歷史。絕對是Etna產區其中一個最早發源的酒莊。
💁🏻♀️ Etna火山高三千多米,而產區則由450米向上至過千米,由北向西南順時針方向延伸。由於火山及風土的變化很大,因此每個斜坡﹑高度或田地所適合種植的葡萄亦十分不同。尤其坡度坐向更是影響著每日溫差、火山土壤、日照🌞、降雨量🌧️、通風🌬️、海洋的影響🌊和耕作系統,因此Benanti的每個酒款都有著十分獨特不同的個性。
💁🏻♂️ Benanti十分尊重Etna 這個地方,只種植Etna本土品種的葡萄🍇,而所用的酵母全是酒莊經過多年研究後選擇的本土酵母。種植亦是採用有機做法🐛🐞🐌🌱,如果想認識Etna的原貌,Benanti的各種酒款絕對是一個十分好的選擇。
【酒仕🍷試酒】
十分多的新鮮紅色香氣,士多啤梨🍓﹑蔓越莓 (Cranberry)﹑覆盆子(Raspberry)﹑紅燈籠椒🫑﹑蕃茄🍅及茄乾,慢慢的再出現新鮮香草加上一點點糖果及煙燻肉🥓的鹹甜香氣,著實有趣。
口感上,十分有活力,高酸度﹑單寧堅實。味蕾上出現紅果﹑蕃茄🍅﹑鹹味香料,餘韻上留下了一點點鹹鮮味。
