JURA - François Rousset-Martin Macvin du Jura '5 ans d'Âge' Vin de Liqueur
Introduction
This wildly complex, intense fortified sweet wine comes from the cult Jura natural winemaking master François Rousset-Martin. Rousset-Martin does not make Macvin to cut corners. His process involves fortifying 100% Chardonnay must during its active fermentation with rich Jura Marc (grape pomace brandy), halting the fermentation midway to capture natural unfermented grape sugars alongside complex fermentation aromatics. Sourced and fortified with precision, the wine undergoes an extraordinary 5 years (60 months) of barrel aging. This extended period concentrates the wine while fundamentally reshaping its contours: fresh primary fruit recedes, giving way to dark honey, bitter orange peel, candied apricot, dried figs, and exotic spices. Far from simply adding richness, the 5-year aging weaves an herbaceous, almost medicinal thread reminiscent of Chartreuse through the wine. Sweets collide with pleasant bitterness, and power is kept in constant dynamic motion by a vibrant, citrusy freshness.
🌟 Key Unique Points
Fortification During Active Fermentation: Chardonnay must is fortified with Marc du Jura mid-fermentation, retaining natural grape sweetness while locking in complex mid-fermentation depth.
5-Year Barrel Aging Transformation: Concentrates and reshapes the wine over 60 months, evolving fresh fruit into bitter orange, dark honey, and complex oxidative spices.
Chartreuse-like Herbaceous Bitterness & Citrus Lift: A singular alliance of medicinal herbs, warmth, and citrusy freshness prevents any cloying sweetness, delivering a wilder, deeply authentic Jura tasting experience.
