Information:

Jean-François Ganevat, born in 1964 in Rotalier, Jura, France, is a 14th-generation winemaker from a family with a 350-year winemaking legacy. Nicknamed "Fanfan," he studied viticulture in Burgundy and honed his skills at Domaine Jean-Marc Morey in Chassagne-Montrachet during the 1990s. In 1998, he returned to lead Domaine Jean-François Ganevat, transitioning the estate to organic farming and, by 2006, fully biodynamic practices, certified by Demeter. Collaborating with his sister Anne, he manages 8.5 hectares of vineyards on Jura’s clay-limestone soils, growing Chardonnay, Savagnin, Poulsard, Trousseau, and Pinot Noir.

Ganevat’s winemaking philosophy centers on low-intervention, natural techniques, emphasizing terroir and grape purity. He uses minimal or no sulfur, employs old oak barrels for fermentation and aging, and avoids overpowering oak influence to highlight fruit and minerality. Producing 35-40 diverse cuvées annually, including Crémant, Vin Jaune, and reds, he blends Jura’s traditional methods with modern natural wine innovation. His wines, celebrated for elegance and complexity, are highly sought after globally but limited in production, making them prized among natural wine enthusiasts. Ganevat’s work has solidified his status as a pioneer in Jura’s natural wine movement.

Description:

Nose: Elegant and complex, offering aromas of ripe stone fruits (peach, apricot), white flowers, and brioche, with hints of toasted nuts, yeast, and a distinctive mineral streak reflecting Jura’s clay-limestone terroir.

Taste: Vibrant and crisp, with delicate, creamy bubbles. Bright acidity balances a refined palate of citrus, green apple, and subtle oxidative notes. The wine shows a chalky minerality and a touch of salinity, with a dry, clean finish. Zero dosage (Brut Nature) emphasizes purity, while extended lees aging (24-48 months) adds depth and a slight savory complexity.
