Domaine Michel Caillot was established in the village of Meursault in 1962 by Roger Caillot, the father of Michel. The estate includes 13 hectares of vineyards, seven in white wines and six in red, with an average age of 40 years of age. Michel Caillot started working at his father’s side in the late 1980s, before he took over the entire operation in the mid-1990s. Though it’s not formally certified, organic agricultural practices are followed, no herbicide has been used for over 30 years.

The three level cellar carved out of limestone is so cold that the primary fermentation lasts until April and malolactic fermentation the next summer. Utilising extended fermentation and ageing periods, the wines are kept on their lees as long as possible and racked once before bottling. Resulting in full-flavoured, complex and integrated creations.

The whites are beautifully balanced, combining pure, clean lemon-citrus fruit, the fascinating minerality of the soil, a fine, creamy texture and a crisp, long and complex finish. While the reds are smooth and supple with pure berry and cherry aromas, Soft, round tannins and lush, ripe fruits on the palate.

These expressive wines are a delight to drink from the moment they are released, yet they possess the potential to age gracefully for many years.
