Information:

The single square mile of hillside pioneered by Peter Newton in 1977 is an impressive site, with expansive vistas of Napa Valley and beyond. It was the conclusion of his irreverent quest to create wines that would capture the multifaceted character of Napa: embracing the radiant California sun whilst featuring the structure offered by the valley's cool, foggy nights.

He understood Spring Mountain was the place he was looking for to create this rare, fresh expression of Napa.

The terraced mountain estate has less than one-fifth of its total 490 acres planted to vines at elevations ranging from 500 to 1,600 feet above sea level. The non-farmed acreage remains in its native forested state providing natural habitat for indigenous wildlife.

Each of the distinctive vineyard blocks is planted to a specific Bordeaux variety with an emphasis on Cabernet Sauvignon.

Wine making:

Harvested by hand at night and hand sorted, our Cabernet Sauvignon is then sent through an optical sorter, which inspects each individual berry to ensure perfect, uniform ripeness. The grapes undergo five days of cold maceration, followed by seven days of fermentation. To develop additional complexity, the wine rested on its skins for up to 20 days before being pressed and aged for 18 months in French oak barrels, 25% of which were new.

Description:

Nose: Ruby in color, it presents a deep purple hue. Our Unfiltered Cabernet Sauvignon 2018 boasts aromas of red wild cherry with tobacco notes, followed by dark fruit and spices. 

Taste: The palate is structured yet refined. The density and volume on the midpalate complement the structure, making for a beautifully complex wine. Very long finish.

💁🏻‍♂️ 酒莊由Peter Newton於 1977 年開闢的一平方英里山坡開始，Peter不顧一切地追求創造捕捉Napa Valley 多面特徵的葡萄酒: 擁抱加州燦爛的陽光☀️☀️，同時以山谷涼爽🌬️、霧濛濛的晚上🌌，令葡萄的風味更為突出。

💁🏻‍♀️ 現時莊園已達490 英畝，酒莊更參與The Napa Green Certified Land and Winery program，希望在種植葡萄時致力於與自然和諧相處。當中非耕地仍保留在其原始森林🌳狀態，為當地野生動物🐎🐑🐏提供自然棲息地。

💁🏻‍♂️ Newton Vineyard 持續實踐考慮了整個生態系統、葡萄藤、動物、其他植物物種、土壤生命和類型，以盡量減少病蟲害，並促進葡萄藤與環境之間的健康共生關係。採用長期可持續和平衡的方法，對所有土地進行有機耕種🐛🦋🐌🐞。

💁🏻‍♀️莊園每次收穫所產生葡萄皮、莖和種子的果渣，這些果渣被收集起來並堆肥，隨後在葡萄園中用作天然肥料和土壤建設劑。

💁🏻‍♂️ Newton Vineyard「自然設計」概念貫穿整個釀酒過程。葡萄酒使用本土酵母進行自然發酵，以保留葡萄園中獲得的天然水果精華。每批葡萄酒的獨特特徵結合在一起，增加成萄酒的整體複雜性。

【酒仕🍷釀酒】
💁🏻‍♂️ 所有葡萄均由人手🤲🏻夜間採摘，經過五天的冷浸漬，然後進行七天的發酵。

💁🏻‍♀️在壓榨前會作20天的浸皮，然後在法國橡木桶中陳釀 18 個月，其當中 25% 是新橡木桶。
