Information:

We want to produce wines with character, personality, identifiable in the territory and style of Roccolo Grassi; wines capable of evolving and maturing with bottle aging. Roccolo Grassi is an ambitious project, but with character and family management; the goal of Marco, Francesca and father Bruno, is to obtain great grapes and produce few bottles but of the highest quality, for this reason the number of bottles varies depending on the vintage.
Our mission is to produce wines with character, personality, identifiable as to their place of origin, according to Roccolo Grassi’s traditional method. Our wines will evolve and mature with bottle aging. Our plans are ambitious, yet we desire to preserve Roccolo Grassi as a family run business. The goal of Marco, Francesca and their father Bruno is to harvest superior quality grapes and to produce relatively small quantities of outstanding wine. Therefore the quantity of bottles yield will vary depending on the vintage.


Winemaking:

Valpolicella Superiore Roccolo Grassi is obtained from approximately 60% fresh grapes and 40% lightly dried grapes for 20 days (the quantity of dried grapes and the number of days vary from year to year; this light dehydration of the grapes allows for a change in the skin/pulp ratio and therefore to maintain a very fresh fruit, but a little more concentrated and rich in noble components present in the skins); it is then aged in wood for 20 months, assembled and bottled. This wine is produced in a part of the vineyard designed to produce only Valpolicella, where the grapes for Amarone are not selected; this allows for greater concentration, great complexity and aromatic finesse.


Description:

Nose: Spicy notes of tobacco and white pepper are perceived on the nose, along with mineral notes of graphite, coffee, cherry and small red fruits.

Taste: In the mouth it is fat, full-bodied, soft; it has a sweet tannin, but of great depth. It is a very fine and complex wine, an ambitious Valpolicella, of great character and personality, in which the refinement in the bottle will improve these characteristics.
