Information:

Eager to explore a wider range of wines using grapes grown in optimal conditions, Charles Back abandoned the estate wine concept in the 1980s, choosing rather to “go where the terroir is”. Today, we are one of the few farms that proudly own all our own vineyards, with land in Paarl, Darling, Swartland and Stellenbosch. Charles has also always been an advocate of social development in the Cape. Under Apartheid, he was one of a number of producers who campaigned for and implemented better conditions for farm workers and in 1997, he established the Fair Valley Worker’s Association, which gave his employees a chance to farm their own land.


Wine making:

The grapes used in the Fairview Shiraz is sourced from a selection of our vineyards located predominantly on the south-western slopes of Paarl Mountain on decomposed granite soils. Complimentary components of the blend are from dryland vineyards from our cooler Atlantic vineyards in Darling as well as some Swartland parcels.

Grapes from different vineyard sites and regions were fermented separately. All parcels were destalked and lightly crushed before fermentation. Fermentation on the skins for approximately 10 days and then pressed. Malolactic fermentation was completed in oak barrels with a small portion remaining in tank. The wine was racked and sent to barrel for 20 months, aged in French oak with approximately 20% new wood being used. The components were then selected, blended and bottled.


Description:

Nose: Opaque ruby red in the glass. The nose invites with notes of black pepper, red berries, plum and a gently whiff of lavender. 

Taste: The palate has plummy red fruit with spice and an elegant finish, typical of the cool and late vintage. Accessible now but will age well for 5-8 years, under good storage conditions.
