Description

Wine making:
Blanc de Blancs, made exclusively from Chardonnay grapes. The vines are grown on clay (60%) and limestone (40%) soils. Vines are on average 25 years old.

Vineyards managed in biodynamics, Ecocert control and Demeter control. The vines are cultivated without weedkillers, chemical fertilizers or synthetic products. We use sulfur, copper and herbal teas to treat the vines. Manufacture and supply of our compost. These vines are ploughed in their entirety. The grapes are harvested by hand, ensuring the maximum quality of the grapes. The vinification process includes ageing in oak barrels for 14 months for part of the wine, while the rest is aged in tanks for 3 months. The wine is then bottled and aged on the lees for a minimum of 48 months, after which it is freshly disgorged. This crémant is not dosaged and is classified as Brut Nature. Stéphane Tissot’s biodynamic approach ensures that the vines are cultivated without the use of herbicides, chemical fertilisers or synthetic products. Instead, natural treatments such as sulphur, copper and herbal tea are used, as well as compost produced on the estate itself. This method of cultivation reflects a deep respect for the environment and the biodiversity of the vineyard, contributing to the authenticity and purity of the wine.
