The cold soak to enhance the dark colour and intense flavours progressed to a natural spontaneous fermentation of about three weeks followed by a week of skin maceration. After gentle pressing the wine was transferred into French oak barriques and puncheons (30% new) to mature for 24 months on its fine lees. Bottled without fining or filtration to retain the beautiful aromas.
Description:
A heady nose, displaying aromas and flavours of dark cherries, blackberries and luscious juicy plums, underpinned by dark chocolate and chilli. A vibrant powerhouse enveloped by soft tannins and mouth watering acidity, seductive and elegant. Made for the ages.
