The second fermentation takes place in bottle and is followed by almost 72 months aging on its lees. Riddling is done by hand.

Nose: Fresh flowers, thyme and dried fruits
Taste: On the palate it’s fresh and structured; the notes of dried apricots and sage come with a wide and mineral finish. The perlage is fine and creamy
